Sweet Potato and Chicken Curry

Though not a traditional curry, this dish has a bit of heat and spice and is easy to prepare. Pre-boil the sweet potato to an "almost soft" stage so that it cooks evenly in the curry but doesn't turn to mush. Cook until all chicken has cooked through and the sweet potato is soft- at least 40 minutes on a simmer. A longer cooking time does allow for a deeper flavour but is not necessary if you don't have the time. Omit the sugar - its really unnecessary, especially with natural sweetness of sweet potato.
